What are scalloped potatoes?
Scalloped potatoes are thinly sliced potatoes baked in a creamy sauce. This dish is cooked until the potatoes are tender and the top is golden brown. It's a popular side dish, especially for family dinners and holidays.
You can also call it potato gratin, but a gratin usually includes cheese, which makes it even richer.
Adding chicken to scalloped potatoes makes one of the best dinners ever! The creamy, thinly sliced potatoes pair perfectly with tender, juicy chicken.
Recipe ingredients
Potatoes: Starchy potatoes are the best choice for potato gratin or scalloped potatoes. They will break down in that cream sauce and become soft and creamy, the perfect “bed” for the crispy and delicious chicken quarters roasted on top.
Chicken leg quarters: They are whole legs, including both the thigh and the drumstick. You can make this recipe using only the thighs, too. In this case, you will need 4 thighs.
Cream: The last main ingredient is heavy cream; you will need about ½ cup/ 125 ml of cream.
Other ingredients: Garlic, sweet paprika powder, fresh or dried thyme, rosemary, salt, and ground black pepper.
How to make scalloped potatoes and chicken?
Prepare the chicken quarters: They have more skin and fat than trimmed drumsticks and thighs. Roasting them on top of the potato gratin allows the rendered fat to cook into the dish, enhancing the flavor. Remove excess fat and skin from the underside of the thigh, leaving only the skin on the drumstick and upper thigh.
Step #1: Slice the potatoes thinly using a mandolin slicer.
Step #2: Spread the slices into a lightly buttered baking dish.
Step #3: Add a mixture of cream, herbs, garlic, and spices.
Step #4: Add the seasoned chicken quarters. Bake for 1 hour or until the chicken is cooked through and the potatoes are very tender. Check!
Good to know!
This scalloped potatoes and chicken recipe serves two or three people at most. It can be easily doubled, but you'll need a larger dish to fit four chicken quarters.
The only tricky part of this recipe is slicing the potatoes thinly to ensure they cook perfectly in one hour. You can use a sharp knife, but it takes time and requires even thickness for all slices. The best way to get uniform slices quickly is to use a mandolin slicer (the Amazon affiliate link opens in a new tab).
How to store and reheat?
Refrigerate leftovers in an airtight container for 3-4 days.
To reheat, preheat your oven to 350°F/175°C, cover the dish with foil, and bake for about 20-30 minutes until heated through. You can also microwave individual portions, covered, for 2-3 minutes or until hot.
