Red Wine Balsamic Turkey

  • 800 g/28 oz turkey breast
  • 125 ml/1/2cup red wine
  • 125 ml/1/2 cup chicken broth
  • ½ tablespoon dried thyme
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • pepper
  • 2 tablespoons cornstarch
  • 250 g/9 oz tagliatelle (or another kind of pasta)
  1. Mix the red wine, chicken broth, thyme, balsamic vinegar, lemon juice, paprika, salt and pepper in a bowl. Chop the turkey into fairly large cubes and add it to the bowl. Mix well to coat, cover and let marinate in the fridge for at least 2 hours.
  2. Place everything in a skillet, bring to a boil, reduce heat and let simmer for about 8-10 minutes. Check to see if the meat is cooked, if not, leave it for a few more minutes but be careful, you don't want to over cook it. In the meantime start cooking the pasta as well.
  3. Whisk the cornstarch with a few tablespoons of water, add to the boiling sauce while continuously stirring and let boil for 1 minute until the sauce thickens slightly.
  4. Serve immediately.
