Red Cabbage Slaw with CBD Oil Infused Peach Salad Dressing

- For the coleslaw:
- 450 g/ 1 lbs red cabbage about ½ a small red cabbage
- 2 large carrots
- 3 scallions
- For the peach salad dressing:
- 4 large canned peach halves
- 1 tablespoon honey
- 1 tablespoon cider vinegar
- 1 tablespoon lime juice more to taste
- ½ teaspoon salt more to taste
- ¼ teaspoon freshly ground black pepper
- 3 tablespoons oil neutral-tasting oil (for instance canola)

Shred the red cabbage and the carrots very finely, a mandoline slicer works best. Slice the scallions finely.
Mix the vegetables in a large bowl.
To make the peach salad dressing, give the chopped peach halves, honey, cider vinegar, lime juice, salt, and pepper to a small bowl.
Add the regular oil and the CBD oil. Blend the dressing with a handheld blender until it emulsifies.
Adjust the taste with more lime juice and salt, if necessary.
Pour the dressing over the salad, mix well and enjoy.
