Ingredients

  • For the coleslaw:
  • 450 g/ 1 lbs red cabbage about ½ a small red cabbage
  • 2 large carrots
  • 3 scallions
  • For the peach salad dressing:
  • 4 large canned peach halves
  • 1 tablespoon honey
  • 1 tablespoon cider vinegar
  • 1 tablespoon lime juice more to taste
  • ½ teaspoon salt more to taste
  • ¼ teaspoon freshly ground black pepper
  • 3 tablespoons oil neutral-tasting oil (for instance canola)

Instructions

  • Shred the red cabbage and the carrots very finely, a mandoline slicer works best. Slice the scallions finely.
  • Mix the vegetables in a large bowl.
  • To make the peach salad dressing, give the chopped peach halves, honey, cider vinegar, lime juice, salt, and pepper to a small bowl.
  • Add the regular oil and the CBD oil. Blend the dressing with a handheld blender until it emulsifies.
  • Adjust the taste with more lime juice and salt, if necessary.
  • Pour the dressing over the salad, mix well and enjoy.
