Lemon Popsicles

Easy lemon popsicles made with only 3 ingredients. These pops are refreshing, and full of flavor - the perfect summer treat!

Ingredients

  • 500 g/ 1.1 lb/ 2 cups lemon yogurt See note
  • juice of 1 large lemon
  • 1-2 tablespoons honey to taste
  • a few drops yellow food coloring optional

Instructions

  • Place the lemon yogurt, freshly squeezed lemon juice, and honey in a bowl. Stir well and add more honey or lemon juice to taste. Stir in a few drops yellow food color, if desired.
  • Divide the yogurt mixture between the popsicle molds and freeze until solid, usually overnight.
  • To release the popsicles, run the molds under warm water.

Creamy lemon yogurt, low-fat, if desired. If using plain Greek yogurt, you might need more honey.
