Wild Garlic Paste

One of the easiest ways of preserving wild garlic. You can make the paste in just a few minutes and use it extensively in cooking.

Ingredients

  • 125 g wild garlic 4.5 oz, Note 1
  • 15 g fine sea salt 0.3 oz/ 2 ½ teaspoons
  • 100 ml vegetable oil 3.5 fl. oz/ scant ½ cup Note 2

Instructions

  • Clean and chop wild garlic.
  • Blend with salt and oil. Transfer to a small jar.

Notes

  1. If you only make this small amount, it is preferable to blend the mixture with an immersion blender. For larger quantities use the food processor. Experience has thought me that large food processors don’t manage small quantities of ingredients very well.
  2. I used mild sunflower oil.
