- 2 tablespoons oil olive or vegetable oil + a bit extra for greasing the dish
- 2 tablespoons chicken seasoning Note 1
Preheat the oven to 375°F/ 180°C and lightly grease or spray a baking dish with oil.
Season: Mix the oil and spices in a small bowl. Brush the chicken breasts all over with the mixture. Place them in the prepared baking dish.
Bake for 35-45 minutes or until cooked through; the internal temperature should be 165°F/ 74°C (Notes 2,3).
Rest for about 5 minutes before slicing and serving.
- Use your favorite ready-made chicken seasoning or spices or spice mixtures.
- The cooking time depends on the size of the chicken pieces and the oven.
- Small (4-6 oz/ 110-170 g): 30-40 minutes
- Medium (about 8 oz/ 225 g): 35-45 minutes
- Larger than that: 45-55 minutes.
3. Make sure to check that the meat is cooked through before serving. Use an instant-read thermometer; the internal temperature of the chicken should be 165°F/74°C. If you don’t have one, make a small cut into the thickest part of the breast; the juices should run clear, and the flesh should be white (no traces of pink or red).
