Country-Style Pork Ribs in the Oven

Ingredients

  • 3 lbs country-style pork ribs 1.3 kg, Note 2
  • 2 tablespoons brown sugar Note 3
  • 2 teaspoons sweet paprika
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper to taste
  • 1 ½ tablespoons fine sea salt
  • 1 teaspoon ground black pepper
  • ½ cup BBQ sauce optional, Note 4

Instructions

  • Preheat the oven to 325°F/ 160°C.
  • Rub: Mix all the spices in a small bowl.
    2 tablespoons brown sugar + 2 teaspoons sweet paprika + 2 teaspoons smoked paprika + 1 teaspoon garlic powder + 1 teaspoon onion powder + ½ teaspoon cayenne pepper to taste + 1 ½ tablespoons fine sea salt + 1 teaspoon ground black pepper
  • Season: Dry the pork ribs with a paper towel. Rub them well with the spice mixture.
    3 lbs country-style pork ribs/ 1.3 lbs
  • Bake: Place the ribs into the baking dish. Cover the baking dish tightly with foil. Bake them in the oven for 2 to 2 ½ hours until very tender. Remove the foil but be careful: the steam is hot!
  • Broil: Preheat the broiler. Line a rimmed baking sheet with aluminum foil. Transfer the ribs to the baking dish using a slotted spoon. Brush the ribs with pan juices or BBQ sauce. Broil for 3-4 minutes until the ribs are browned to your liking. Always keep an eye on them to prevent them from burning.
    ½ cup BBQ sauce
  • Serve: Baste them again with pan juices or BBQ sauce and serve immediately.

Notes

  1. I recommend using a slotted spoon for transferring the ribs to the baking sheet instead of tongs. The meat is very tender and might fall apart if you try to move it using tongs.
  2. Boneless or bone-in country-style pork ribs, about 8 ribs. You can make as many as you can fit into the baking dish in a single layer.
  3. Rub: This is my favorite spice rub for ribs. However, you can rub the ribs with just salt and pepper or any other spice mixture you like.
  4. BBQ sauce or pan juices: You can baste the pork ribs with BBQ sauce OR pan juices before and after broiling them. Both versions are delicious.
