- 120 g unsalted butter 4.2 oz/ ½ cup, room temperature
- 90 g brown sugar 3.2 oz/ ½ cup
- 65 g crunchy peanut butter 2.3 oz/ ¼ cup, unsweetened
- 1 egg
- 50 g cup flour 1.7 oz/ ⅓ cup + 1 tablespoon
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon fine sea salt
- 150 g rolled oats 5.3 oz/ 1 ⅔ cup
- 65 g raisins or cranberries or a mixture of the two 2.3 oz/ ⅓ cup
- 50 g chopped walnuts 1.7 oz/ ⅓ cup
Preheat the oven to 180 grad Celsius/350 grad Fahrenheit. Line a baking tray with parchment paper.
Batter: Cream butter and sugar. Add peanut butter and then the egg. Beat everything together for one more minute.
Mix and sift the flour, baking powder, cinnamon, and salt and stir into the butter mixture. Add oats, raisins (or cranberries), and walnuts.
Drop rounded tablespoons of the mixture onto the baking sheet and press lightly with a spoon to form circles.
Bake for about 15 minutes until lightly colored.
Let rest on the tray for 5 minutes, transfer to wire racks to cool completely.
Store in an airtight container.
