Ingredients

  • 120 g unsalted butter 4.2 oz/ ½ cup, room temperature
  • 90 g brown sugar 3.2 oz/ ½ cup
  • 65 g crunchy peanut butter 2.3 oz/ ¼ cup, unsweetened
  • 1 egg
  • 50 g cup flour 1.7 oz/ ⅓ cup + 1 tablespoon
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon fine sea salt
  • 150 g rolled oats 5.3 oz/ 1 ⅔ cup
  • 65 g raisins or cranberries or a mixture of the two 2.3 oz/ ⅓ cup
  • 50 g chopped walnuts 1.7 oz/ ⅓ cup

Instructions

  • Preheat the oven to 180 grad Celsius/350 grad Fahrenheit. Line a baking tray with parchment paper.
  • Batter: Cream butter and sugar. Add peanut butter and then the egg. Beat everything together for one more minute.
  • Mix and sift the flour, baking powder, cinnamon, and salt and stir into the butter mixture. Add oats, raisins (or cranberries), and walnuts.
  • Drop rounded tablespoons of the mixture onto the baking sheet and press lightly with a spoon to form circles.
  • Bake for about 15 minutes until lightly colored.
  • Let rest on the tray for 5 minutes, transfer to wire racks to cool completely.
  • Store in an airtight container.

Notes

Use a digital kitchen scale to measure the ingredients when baking; it guarantees for best results.
