- 2 medium apples about 375 g/ 13 oz, Note 2
- ½ lemon the juice
- 3 large eggs at room temperature
- ¾ cup granulated sugar 150 g/ 5.5 oz
- ⅓ cup + 1 tablespoon olive oil 90 ml, Note 3
- 1 ¼ cup all-purpose flour 180 g/ 6.5 oz
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 pinch of salt
- 2 teaspoons icing sugar for dusting the cake
Preheat the oven to 350°F/180°C. Line the bottom of the springform pan with parchment paper and lightly butter the ring.
Apples: Peel, core, and quarter the apples. Slice them thinly, place them in a medium bowl, and mix them with lemon juice and 1 tablespoon of the sugar.2 medium apples + ½ lemon + 1 tablespoon of the sugar Cake batter: Beat the eggs and the sugar until light and frothy, about 3 minutes. Gradually add olive oil while mixing. Bake: Pour the batter into the prepared pan and bake it for 50 minutes or until the top is golden brown and a toothpick inserted into the middle of the cake comes out clean.
Rest the cake in the pan for about 20 minutes, then transfer it to a wire rack to cool completely.
