Thermomix Lemon Curd
Thermomix lemon curd: this is the easiest recipe for making curd. Just place all the ingredients in the mixing bowl and push a few buttons.
Servings 1 jar
- 3-4 organic lemons depending on size (zest and juice)
- 130 g freshly squeezed lemon juice
- 4 eggs
- 100 g unsalted butter
- 300 g granulated sugar
Wash the lemons very well to remove the wax and dry them. Grate the zest, only the yellow parts, the white skin is bitter. You will need about 3-4 tablespoons zest.
Place the eggs, butter, sugar, lemon zest, and lemon juice in the Thermomix. Turn on the machine and cook for 20 minutes at 90 C on speed 2 without placing the measuring cup on top of the lid.
Once the lemon curd is cooked place the measuring cup on top of the lid and mix the curd for 25 seconds on speed 6.
Pour into a jar and let cool on the counter, it will thicken. Store in the refrigerator.
