- 2 lbs potatoes 1 kg, Note 1
- 1 red onion
- 1 yellow onion
- 2 bell peppers the color of your choice
- 2 tablespoons olive oil
- ¾ teaspoon fine sea salt
- ½ teaspoon ground black pepper
- ½ teaspoon sweet paprika Note 2
- ½ teaspoon thyme
- ½ teaspoon rosemary
- ¼ teaspoon red chili flakes more to taste
- 1 lb Italian sausage 500 g. Note 3
Preheat the oven to 400°F/ 200°C.
Potatoes: Peel them if desired. Otherwise, scrub and dry them thoroughly. Cut them into pieces about 2 inches (5 cm) in size. Dice the peppers into 1-inch (2.5 cm) cubes. Slice the onions thickly and separate the slices. Cut the sausage into thick slices (about 2 fingers wide) and keep them separate from the other ingredients.2 lbs potatoes / 1 kg + 2 bell peppers + 1 red onion + 1 yellow onion + Season: Place all the vegetables on a large baking sheet. Drizzle with oil and toss to coat evenly. Add sausages: Remove the baking sheet, toss the vegetables again, then add the sausages. Bake for an additional 20 minutes or until the potatoes are tender and the sausages are cooked through. The safe internal temperature for pork sausages is 160°F (71°C). Use a meat thermometer to ensure the sausages are fully cooked.1 lb Italian sausage / 500 g Rest for 5 minutes, then serve.
- Potatoes: I use all-purpose potatoes with medium starch content, such as Yukon Gold, white, or fingerling potatoes. Red potatoes are also a good choice. You can peel them or leave the skin on, based on your preference.
- Spices and herbs: You can use different spices and herbs or use a store-bought mixture.
- Sausages: I used Italian pork sausages, but I often make this bake with bratwurst or kielbasa. Feel free to use whichever sausage you prefer or have on hand; the dish will be just as delicious. You can also choose mild, medium, or hot Italian sausages based on your taste.
