Avocado toast: Place mashed avocado or avocado slices on top of the cottage cheese toast. Drizzle with lemon juice, and sprinkle it with red onions, roasted sesame seeds, and some microgreens (if using).
Salmon toast: Mix the cottage cheese with dill and a bit of horseradish. Top the bread with one or two thin slices of smoked salmon, onions, and extra dill.
Cucumber toast: Mix the cheese with dill and a bit of sweet paprika. Top the bread with cucumber slices, onions, more dill, and paprika powder.
Egg toast: Fry or poach the eggs. Mix the cheese with dill. Top the bread with the egg and onions, and sprinkle it with paprika, coarse sea salt, black pepper, and more dill.
Tomato toast: Add a few tiny dollops of pesto on the cottage cheese and swirl the two together. Add tomato slices and drizzle them with a few drops of balsamic vinegar. Garnish with red onions, coarse salt, black pepper, fresh basil, and a little bit of olive oil.
Banana toast: Top the bread with thickly sliced bananas, drizzle it with a little honey, and add a sprinkle of cinnamon.
