    Recipe ingredients

    • Cottage cheese: There are many brands of cottage cheese; use your favorite. You can use either small curd or large curd, full-fat, low-fat, and even fat-free cottage cheese. However, the full-fat variety tastes best. 
      • Whipped and creamy cheese adds a delightful creaminess, which I prefer. You can prepare a larger batch using a whole 1 lb (450 g) container, which keeps well in the fridge for up to 7 days.
      • If you donโ€™t want to whip it, you can prepare this recipe with plain cottage cheese in its original form.
      • You will need 1 ยฝ to 2 tablespoons of spread (smooth or curdy) for each slice of bread. 
    • Bread: The best bread for this recipe is sturdy and can hold up well with the topping. Sourdough bread is an excellent choice due to its texture and ability to toast nicely without getting soggy easily. It also adds a delightful crunch to your dish.
      • Other types of bread: You can use other sturdy bread like whole grain bread, multigrain, or even rye. Choose the one you enjoy most.
      • I donโ€™t recommend using packaged, soft, white bread. 

    Topping ingredients

    • Fine sea salt and ground black pepper to season the spread. 
    • Dill for salmon, egg, and cucumber toast. Use fresh dill if you have it. Otherwise, frozen will work, too. I donโ€™t like dry dill, so I never use it for anything. 
    • Red onion (very finely chopped). Alternatively, use a shallot or green onions. 
    • Avocado toast with red onions and sesame seeds. Optional: a little cress or other microgreens to add on top. 
    • Smoked salmon toast with horseradish, red onions, and dill. You could drizzle the salmon with a few drops of lemon juice. 
    • Cucumber toast with red onions, fresh dill, and some paprika.
    • Egg toast with red onions and dill. You can use fried or poached eggs; both versions are incredibly delicious.
    • Tomato toast with pesto, balsamic vinegar, and red onions. Optional: Top with fresh basil leaves and a drizzle of olive oil.
    • Banana toast with honey and cinnamon.

    • Whip the cottage cheese in a food processor or leave it as it is. Add salt and pepper to taste.
    • Toast the slices of bread in a toaster.
    • Chop the onions very finely. 
    • Dill: If you like to make cucumber, salmon, or egg toasts, mix the cottage cheese with 1-3 teaspoons of dill (depending on how much cheese you need for topping the bread).
    • Spread 1 ยฝ to 2 tablespoons of cheese on each slice of bread.

    • 6 slices sourdough bread
    • 1 ยฝ to 2 tablespoons cottage cheese per toast
    • 1 small red onion or shallot or green onion, very finely chopped
    • fine sea salt and ground black pepper
    • 1-2 teaspoons dill chopped for salmon, egg, and cucumber toast

    Topping ideas (Note 2):

    • avocado, lemon juice, sesame seeds, microgreens
    • smoked salmon, ยฝ teaspoon horseradish, dill
    • cucumber, dill, paprika
    • egg, dill
    • tomatoes, ยฝ teaspoon pesto, balsamic vinegar Optional: basil leaves and a drizzle of olive oil.
    • banana, ยฝ teaspoon honey, cinnamon

    Instructions

    Toasts:

    • Optional: Whip the cottage cheese in a food processor until smooth. Otherwise, leave the cottage cheese as it is. Add salt and pepper to taste.
    • Toast the slices of bread in a toaster.
    • Chop the onions very finely.
    • Mix: For cucumber, salmon, or egg toasts, mix the cottage cheese with 1-3 teaspoons of dill (depending on how much cheese you need for topping the bread).
    • Spread 1 ยฝ to 2 tablespoons of cream cheese on each slice of bread.

    Toppings:

    • Avocado toast: Place mashed avocado or avocado slices on top of the cottage cheese toast. Drizzle with lemon juice, and sprinkle it with red onions, roasted sesame seeds, and some microgreens (if using).
