    Smashed Peas on Toast

    Smashed peas on toast is a simple yet flavorful quick meal - for me, it's the perfect breakfast when topped with an egg. The creamy, slightly sweet peas are mashed with lemon juice, olive oil, and seasonings and then spread over crispy toast. You can top it with feta, mozzarella, poached, or fried eggs. Itโ€™s fresh, vibrant-green, and ready in just a few minutes!

    I love avocado on toast, and these Tomato and Poached Egg Toasts or Mushroom Toasts with Eggs are some of my favorite breakfast or brunch recipes. But peas on toast are just as delicious - give them a try, and youโ€™ll know what I mean!

    Recipe ingredients

    Frozen peas: No need to thaw them - just drop them into the boiling water. Try the Butter Peas from Frozen, too.

    Seasoning: Lemon juice and zest, garlic powder or one small garlic clove, dried mint or fresh leaves, red pepper or chili flakes, fine sea salt, and ground black pepper.

    Toppings for smashed peas on toast

    Eggs: Medium-boiled, hard-boiled, poached, or fried eggs. Scrambled eggs would also be great - follow this recipe for Scrambled Eggs on Toast to make them.
    Vegetables: Avocado slices, tomatoes, thinly sliced radishes, or finely chopped green onions.
    Cheese: Feta cheese, torn mozzarella or burrata, grated cheddar or Gouda. If you use grated cheese, consider broiling the pea toast for a couple of minutes under a hot grill.
    Sprinkle on top: Red pepper flakes, nigella seeds, roasted sesame seeds, black sesame seeds, roasted sunflower seeds, or pine nuts. Try seasoning mixtures like hummus topping, Everything Bagel seasoning, zaโ€™atar, or dukkah.

    Variations on the recipe

    Make creamy smashed peas: Replace the olive oil with 1-2 tablespoons of mayonnaise, sour cream, or softened cream cheese and adjust the seasoning.

    Make a dip or bread spread: Cook a double batch of peas and blend them with enough olive oil to make a smooth spread; 2-3 tablespoons of oil should be enough.     How to make smashed peas on toast

    Step #1: Cover the frozen peas with boiling water from a kettle and cook them for 2-3 minutes. Rinse under cold water.

    Step #2: Place them in a bowl and smash them with a fork.

    Step #3: Add the remaining ingredients and combine.

    Step #4: Toast the bread, spread the peas on top, and serve with the topping of choice.

    Good to know!

    A wide, shallow bowl with a flat bottom makes smashing the peas easier, as the surface gives you better control and helps spread them out evenly.

    Make ahead and store

    You can make a bigger batch up to 2-3 days in advance. Store the peas in an airtight container in the fridge for up to 3 days.

    Reheat in the microwave when ready to use. Or serve them without reheating; I usually donโ€™t bother, as the freshly toasted bread is hot enough.

    Other serving ideas

    With crackers or veggies: Serve the peas as a dip with crunchy crackers or fresh veggie sticks like cucumber, carrot, or bell pepper.

    In sandwiches or wraps: Add grilled veggies, chicken, or turkey โ€“ a great use for leftover roasted meat or vegetables.

    As a side: You can make a bigger batch and serve it as a side dish with grilled meats, fish, or roasted vegetables.

    • 1โ…“ cup frozen peas Note 2
    • 1 tablespoon olive oil Note 3
    • ยฝ lemon the zest and a little lemon juice, Note 4
    • ยฝ teaspoon dried mint or 2-3 finely chopped fresh leaves
    • ยฝ teaspoon garlic powder or 1 small grated garlic clove
    • 1 tiny pinch red pepper flakes to taste
    • ยผ teaspoon fine sea salt more to taste
    • โ…› teaspoon ground black pepper
    • 4 slices of bread

    Optional toppings:

    • vegetables avocado, tomato, radishes, green onions

    Instructions

    • Boil the peas: Place them in a small pot and cover them with boiling water from a kettle. Cook for 2-3 minutes, then drain and rinse under cold water.

    • Smash the peas with a fork and mix in olive oil, lemon zest, lemon juice, salt, and pepper. Adjust seasoning to taste.
