- 2 lbs potatoes
- 1 tablespoon vegetable oil
- 1 lb pumpkin Note 1
- 1 tablespoon granulated sugar
- ½ teaspoon cinnamon
- 1 cup water
- 9 oz smoked sausage such as cabanossi, Note 2
- fine sea salt and ground black pepper
Preheat the oven to 400°F/ 200°C.
Prepare the potatoes: Peel the potatoes and slice them thickly, about 0.5 in/ 1½cm. Place them on the baking sheet. Rub them with the oil, arrange them on ¾ of the baking sheet, and sprinkle them with salt and pepper.2 lbs potatoes + 1 tablespoon vegetable oil + fine sea salt and ground black pepper Prepare the pumpkin: Slice it into wedges, about 0.7 in/ 1.8 cm (so just a tiny bit thicker than the potatoes). Arrange the wedges on the other side of the baking sheet. Add sausages: In the meantime, slice the sausages into thick slices, about 0.8 in/ 2 cm thick. Add them to the sheet pan on top of the potatoes and continue roasting for another 10 minutes or so until the vegetables are soft and the sausages cooked through.9 oz smoked sausage Serve immediately with a green salad.
- Pumpkin: I had Hokkaido, but butternut squash or another flavorful sort of pumpkin would be fine as well.
- Sausage: You can use any other good-quality smoked sausage from the deli, kielbasa, Andouille sausage, or smoked bratwurst.
