Thermomix Bailey's

Homemade Thermomix Bailey's is incredibly rich and creamy. A delicious alternative to the store-bought Irish Cream and a great idea for a DIY gift.

Ingredients

  • 100 g milk chocolate 3.5 oz
  • 2 teaspoons instant coffee granules
  • 3 tablespoons hot water
  • 300 g evaporated milk 10.5 oz, 7.5% fat
  • 200 g sweetened condensed milk 7 oz
  • 400 g half-half 14 oz, Note 2
  • 300 g whiskey 10.5 oz, Note 3

Instructions

  • Chop or break the chocolate roughly. Grate for 10 seconds on level 9. Scrape it down with the spatula.

  • Melt: Add the instant coffee granules, 3 tablespoons of hot water, and 5 tablespoons of the evaporated milk. Heat to 50 degrees Celsius for 3 minutes on level 2 to melt the chocolate. Check to see that the coffee is completely dissolved. If not fully dissolved, continue heating at 50 degrees for two minutes or so.

  • Mix: Add the remaining evaporated milk, sweetened condensed milk, half-half (or milk and cream), and whiskey. Start mixing slowly on level 1, going up to level 3 for about 30 seconds. Don't increase the speed; you don't want to whip the cream or make it curdle.

  • Pour into sterilized bottles and keep refrigerated.

Notes

  1. The measurements are metric, as Thermomix uses the metric system.
  2. You can make the drink without a Thermomix or blender. Finely chop the chocolate and place it in a heatproof bowl over a pot of simmering water (without touching the water) to melt slowly using a bain-marie. Dissolve the coffee granules in 3 tablespoons of boiling water and add to the chocolate. Then, add the remaining ingredients, transferring to a larger bowl if necessary, and stir to combine before pouring into sterilized bottles.
  3. Replace half-half with an equal mixture of full-fat milk and heavy cream.
  4. Whiskey: I had Teacher's whiskey, which is a Scottish one. Use Irish whiskey instead or something else you like.
