Why do we love this strawberry fudge recipe?
Homemade gift: Pretty pink fudge, perfect for Valentineโs, Christmas, a girlโs party, or a gender reveal party.
Easy: Fudge recipes with marshmallow fluff are super easy and quick to make; all you have to do is heat and stir a few ingredients.
Cheap: You will only need a few ingredients to make a large batch of delicious strawberry fudge, and thatโs ideal at that time of the year when you would like to give everybody a present.
Sweet: The perfect gift for people with a major sweet tooth!
Creamy and smooth and tasting of strawberries, what can you want more from a simple fluff fudge recipe?
Recipe ingredients
Sugar: The main ingredient for making this yummy fudge recipe. Sugar in the form of plain sugar, in the form of marshmallow fluff, and white chocolate will also be needed for the recipe. Sugar, sugar, sugar!
- Strawberry marshmallow fluff (the Amazon affiliate link opens in a new tab). It consists mainly of sugar as well. The fluff comes in different flavors and is sold in plastic jars. The jars I can buy around here contain 6.3 oz/ 180 g fluff.
White chocolate or white chocolate chips: Use high-quality chocolate you enjoy eating plain; cheap chocolate affects the final taste. Try this Homemade Romanian Chocolate, too.
Evaporated milk with about 7,5 % fat
Food coloring: I used red food coloring in gel form mixed with strawberry essence to color the fluff fudge. If using gel colors, you will not need much; about ยผ teaspoon is enough to get those pretty pink swirls.
Candy thermometer: Using a candy thermometer makes things so much easier when making fudge of any kind; knowing the exact temperature ensures the best results.
See the recipe card for full information on ingredients and quantities.
How to make fudge with marshmallow fluff?
- Chocolate: Chop it finely. If using white chips, skip this step. Set it aside.
- Prepare food coloring: Combine the red food coloring with the strawberry extract (or vodka) in a small bowl. If using vanilla extract, leave out the vanilla extract used later in the recipe. Stir until the gel dissolves evenly. Set aside.
- Cook: Combine sugar, butter cubes, and evaporated milk in a heavy saucepan. Slowly bring to a boil over medium-low heat while stirring often (1).
- Once it comes to a rolling boil, check the temperature frequently with the candy thermometer. Remove the pan from the heat as soon as the temperature reaches 234 degrees Fahrenheit/ 112 degrees Celsius (2).
- Stir in the chopped chocolate (or white chocolate chips), marshmallow fluff, and vanilla extract. Stir until the chocolate is melted and the mixture is smooth (3).
- Make the swirls: Drop small amounts of the food coloring mix all over the fudge mixture (4).
- Using a knife or a fork, create a swirled pattern by carefully going through the fudge mixture back and forth (5). Don't overdo it, or the fudge will turn pink instead of nicely patterned.
- Pour the fudge mixture into a square pan lined with oiled aluminum foil (6).
- If you want to make heart-shaped fudge, place small dollops of it in small silicone molds.
- Let cool for a while at room temperature, then transfer to the fridge until completely set (7).
- Cut: Remove the sweet strawberry fudge from the baking pan and cut it into small pieces (8), or remove it from the silicon molds by pressing the fudge out from underneath (9).
Good to know
Strawberry extract: Dissolve the gel food coloring with pure strawberry extract if possible. If unavailable, substitute with vanilla extract or a small amount of vodka. If using vanilla extract here, skip it later in the recipe, as the fudge will taste like vanilla rather than strawberry unless you add strawberry essence.
Food gel coloring: Use gel for its high concentration and minimal moisture, ideal for pink strawberry fudge.
Candy thermometer: Using a candy thermometer ensures precise results and eliminates guesswork. Factors like heat level, pot size, bottom thickness, and stirring can affect boiling times, so relying on a set time can be unreliable. A thermometer (the Amazon affiliate link opens in a new tab) helps achieve the perfect consistency every time.
Recipe FAQs
I love adding freeze-dried strawberries or raspberries when I have them.
You should wrap the strawberry fudge with marshmallow fluff in wax paper and then place it in an airtight container.
Storage and freezing instructions
Refrigerate the strawberry fudge with marshmallow fluff for about 2 weeks.
Freeze it for 2-3 months. You can freeze the fudge as a larger block or in smaller pieces. Larger blocks minimize surface area, reducing the risk of drying out, while smaller pieces let you remove only the amount needed. Wrap the fudge (block or pieces) individually in plastic wrap or aluminum foil, then place them in airtight containers or freezer bags. Thaw slowly in the fridge, as rapid temperature changes may impact the texture and flavor.

Notes
- Gel coloring is best; it is very concentrated and doesnโt add too much moisture to the mixture.
- If strawberry essence is unavailable, use vodka or pure vanilla extract. If using vanilla extract, leave out the vanilla extract needed later in the recipe. Using vanilla extract will reduce the strawberry flavor; the strawberry marshmallow fluff is not enough for an intense strawberry flavor unless you use the strawberry essence. However, pink vanilla fudge is also delicious.
- Leave out if using vanilla extract to dissolve the food gel coloring.

I added freeze dried strawberries.
Kris says
The flavor was great, but the texture seemed a little dry (crumbly for fudge). Any suggestions for next time?
Thanks!
Kris
Adina says
I don't know what to say, Kris. Mine is always rather creamy. Maybe you've heated the mixture too much?
Kris says
@Adina,
Thanks for the suggestion. I appreciate the feedback!

Rachel says
I was wondering what type of sugar do you recommend? (I am in UK). Looking forward to trying this!
Adina says
Hi Rachel. Regular sugar, I didn't have anything special.

beautiful! marshmallow fluff is the best! it's kind of weird, but it's so tasty and so versatile!

The color and the swirls are so pretty! Like you, I can only eat a small amount at a time. They tend to be too sweet for me. It's a kind of food that definitely needs to be shared (and there are always willing takers)!
