    This baked goat cheese with tomatoes recipe is easy but feels a little fancy. The creamy cheese warms up while the tomatoes roast sweet and juicy. They are perfect for a light lunch, simple dinner, or starter - a quick recipe thatโ€™s full of flavor.

    Tomatoes: I use medium, firm tomatoes that stay intact when baked. Each tomato should be large enough to cut 4 even slices, giving a total of 8, and wide enough so the goat cheese slices sit neatly on top without spilling over.

    Goat Cheese: A soft-ripened goat cheese log is ideal - it should have a thin white rind like brie and a creamy, tangy interior. Look for goat brie, triple-cream goat cheese, or even a cream cheese + chรจvre blend as a substitute. Slice it evenly so it melts gently on top of the tomatoes.

    A drizzle of olive oil and honey, a sprinkle of sugar, salt, and pepper, and a touch of dried herbs to complete this dish.

    How to bake goat cheese?

    Step #1: Remove the stems from the tomatoes and slice them into 8 pieces.

    Step #2: Sprinkle with sugar, salt, and pepper.

    Step #3: Cut the goat cheese log into 8 slices and place on the tomato slices. Drizzle with oil, honey, and seasoning.

    Step #4: Bake for 5โ€“10 minutes until the cheese is warm and soft.

    Variations

    While this easy-baked goat cheese recipe is perfect as is, you can mix things up by adding other roasted vegetables. Thin slices of eggplant work beautifully - just roast them first until tender, then layer with the tomatoes and goat cheese. You could also try zucchini or bell peppers.

    Soft-ripened goat cheese doesnโ€™t melt like a typical cheese. Instead, it softens and gets wonderfully creamy, keeping its shape while the center warms up and spreads a little. Itโ€™s perfect for scooping up with roasted tomatoes and bread.

    Store and reheat

    Soft-ripened baked goat cheese doesnโ€™t melt fully like mozzarella or cheddar, so reheating wonโ€™t make it ooze more than it already does. If you have leftovers, warm them gently in the oven at 350ยฐF / 175ยฐC for 5โ€“7 minutes, or until the cheese is just soft again and the tomatoes are heated through.

    • Avoid the microwave - it can make the cheese separate or become slightly grainy.

    If I have any leftovers, I usually eat them at room temperature on a slice of bread. Thereโ€™s rarely enough left to make reheating worthwhile, and theyโ€™re still delicious without it.

    What to serve with it?

    This baked goat cheese is perfect with a crusty baguette, slices of sourdough, or crunchy crackers for scooping up the warm, creamy cheese and roasted tomatoes.

    Ingredients 

    • 2 medium tomatoes
    • a pinch of granulated sugar
    • fine sea salt and ground black pepper
    • 1 small log soft-ripened goat cheese about 5 oz /150 g Note 2
    • 1-2 tablespoons olive oil
    • 2 teaspoons honey
    • a good pinch of oregano or thyme

    Instructions

    • Preheat the oven to 400ยฐF / 200ยฐC. Lightly oil the roasting dish.
    • Prepare the tomatoes: Carefully remove the stem from each tomato without damaging the flesh, using a small, sharp paring knife. Slice the tomatoes evenly so you have a total of 8 slices. Place the slices in the roasting dish and sprinkle lightly with granulated sugar, salt, and pepper.
      2 medium tomatoes + a pinch of granulated sugar + fine sea salt and ground black pepper
    • Cut the goat cheese log into 8 slices and place them on top of the tomato slices.
      1 small log soft-ripened goat cheese
    • Drizzle with olive oil, honey, dried herbs, and a little more salt and pepper.
      1-2 tablespoons olive oil + 2 teaspoons honey + a good pinch of oregano or thymec
    • Bake on the middle rack of the oven for 5โ€“10 minutes, until the cheese is warm and slightly melted.
    • Serve immediately with a baguette or crusty bread. If you like, drizzle a little extra olive oil and honey over the top before serving (not too much).

    Notes

    1. Servings:ย the recipe serves 4 as an appetizer and 2 as a light meal with bread.
    2. Goat cheese: I use a soft-ripened goat cheese log - it has a bloomy rind like brie and a creamy, tangy interior. In the U.S., look for goat brie, triple-cream goat cheese, or even a cream cheese + chรจvre blend as a substitute.
