    Roasted Cherries

    These tasty roasted cherries are so good - sweet, juicy, and full of flavor. They're a simple and delicious way to use up a big batch of cherries.

    You won't believe how good these roasted cherries are - absolutely amazing! I made them a few days ago and served them with some strained yogurt. We loved them so much that I had to make another batch the very next day.

    Just like I did with these Cherry Meatballs - made them once, loved them, and had to make them again right away!

    Recipe Ingredients

    Cherries: I used sweet, dark, heart-shaped cherries from our garden, similar to Bing cherries. Any sweet variety will work.

    • I used about 2 lbs/1 kg of pitted cherries, but the exact amount isn't crucial - just make sure they fit in a single layer in the roasting pan.

    Spices: A vanilla bean pod, a cinnamon stick, 2 star anise, and some cardamom pods. You can make perfectly delicious roasted cherries without any spices at all, maybe just a teaspoon of pure vanilla extract.

    Orange juice and elderflower syrup: I always use freshly squeezed orange juice. The elderflower syrup is optional as well. I love it, but you can leave it out entirely or replace it with any other syrup, for instance, maple syrup.

    How to roast cherries?

    Step #1: Marinate the pitted cherries with the spices for 10 minutes. Add juice and syrup.

    Step #2: Roast the cherries for 30-40 minutes, stirring halfway.

    Good to know!

    I love serving them with strained yogurt. You can follow the recipe for Yogurt Bomb and make deluxe strained yogurt with heavy cream - the best ever!

    Or you can make this simple "just yogurt" recipe:

    Set a fine-meshed sieve over a bowl, making sure there's space between the sieve and the bottom. Line it with a clean kitchen towel or cheesecloth, pour in the yogurt, and fold the towel ends over the top.

    Refrigerate for 5-6 hours or overnight. Discard the liquid once during this time so the yogurt doesn't sit in it. When ready, spoon the thickened yogurt into a clean bowl, stir in brown sugar and vanilla to taste, and let it rest for a while to allow the sugar to dissolve.

    Storage

    Refrigerate in an airtight container for 4-5 days.

    Reheat: I never reheat them, but you can do that in the oven or microwave.

    How to serve roasted cherries?

    The cherries can be served warm or cool.

    You can serve them with a simple cake, stir them into unstrained yogurt, you can have them with semolina or rice pudding, or with ice cream. You can also enjoy them with porridge or homemade muesli in the morning. There are lots and lots of possibilities.

    Ingredients 

    • 2 lbs cherries pitted
    • 4 tablespoons brown sugar
    • 1 vanilla bean Note 1
    • 1 cinnamon stick
    • 2 star anise
    • 3 green cardamom pods
    • โ…” cup orange juice freshly squeezed, 1-2 oranges
    • 2 tablespoons elderflower syrup optional, Note 2

    Instructions

    • Preheat the oven to 400ยฐF/ 200ยฐC.
    • Marinate cherries: Place the halved cherries in a roasting tray, add the sugar, and mix gently, distributing the fruit evenly on the tray. Add the split vanilla bean, the cinnamon stick, star anise, and cardamom seeds. Let the fruit marinate for about 10 minutes.

    • Squeeze the oranges and mix the juice with the elderflower syrup, if using. Pour over the cherries and mix well.

    • Roast the cherries: Place the roasting pan in the oven and bake the cherries for 15-20 minutes. Stir well, spread them out evenly again, and continue roasting for another 15-20 minutes, until they look slightly shriveled.
    • Serve warm on cooled on top of the strained yogurt (Note 3 - Additional recipe for strained yogurt).

    Notes

    1. The spices are optional. If you choose not to use them, replace them with 1 teaspoon of pure vanilla extract.
    2. Syrup: If you don't have elderflower syrup, you can leave it out or substitute another syrup, for instance, maple syrup.
    3. Additional recipe for strained Greek yogurt: Line a fine-meshed sieve with a clean kitchen towel or cheesecloth and set it over a bowl, making sure the sieve doesn't touch the bottom. Pour in 2.2 lbs/ 1 kg Greek yogurt, gather the towel ends over it, and refrigerate for at least 5-6 hours or overnight. Discard the strained liquid once during this time to keep the yogurt from sitting in it. When ready, transfer the thickened yogurt to a clean bowl, add brown sugar and vanilla to taste, stir well, and let it sit for a bit so the sugar can dissolve fully.
