    For this recipe, you will need:

    • Two tablespoons: light brown sugar.
    • Two teaspoons each: garlic powder, onion powder, sweet paprika, thyme, fine sea salt, or kosher salt.
    • One teaspoon each: ground black pepper and rosemary.
    • Spicy version: Add red pepper flakes or red chili flakes (about ½ teaspoon) or cayenne pepper to taste. 

    How to make pork roast seasoning?

    • Gather all the spices and measure them in a small bowl.
    • Mix with a spoon or a whisker until well combined, ensuring there are no clumps or pockets of individual spices.
    • Transfer to an airtight container.

    How to use the seasoning on a pork roast?

    • Before cooking your pork roast, pat it dry with paper towels; this step will ensure that the spice blend will stick to the meat. 
    • Generously sprinkle the dry rub mix over the meat.
    • Rub the spice mixture into the meat, ensuring it is evenly coated on all sides.
    • Let the seasoned meat sit for a few minutes to allow the flavors to penetrate.
    • Cook the pork roast according to your preferred method, such as roasting, grilling, or slow cooking.

    Expert Tips

    Use quality ingredients, and here I mostly think about paprika powder. Use the best quality you can afford; I know from experience that cheap paprika only tastes of dust.  

    Adjust seasonings to your taste preferences. Increase or decrease the amount of each ingredient to achieve the desired level of spiciness or flavor.

    Experiment with herbs: While the recipe suggests dried herbs like thyme and rosemary, you can also try other herbs such as oregano, sage, basil, or marjoram.

    Versatility: Don't limit yourself to using this seasoning only for pork roast. It can also be used for seasoning other cuts of pork, such as pork chops, tenderloin, or ribs, as well as other meats like chicken or beef.

    Recipe FAQ

    Can I make the mixture finer?

    For a fine and smooth texture, you can use a food processor or spice blender to combine all the ingredients. Process them until they form a fine powder.

    Can I make a larger batch of this pork rub recipe?

    Sure, make a larger batch and store it as instructed. 

    Can I use fresh herbs instead of dried herbs?

    Only if you make a small batch and use the blend immediately; you can’t store a mix made with fresh herbs, as they will spoil quickly. 

    How to store?

    • Store the pork roast seasoning in an airtight container in a cool, dry place (like a spice cabinet or a drawer) to maintain its freshness and potency. 
    • Suitable containers for a rub mixture: Glass jars, small food containers with lids, or small, resealable plastic bags.
    • If stored properly, it can last even for one year. However, for the best flavor, I recommend using it within 4 to 6 months as the flavors might weaken over time.
    • Check occasionally to ensure the blend is still flavorful and hasn't gone stale.

    • 2 tablespoons light brown sugar

    Instructions

    Pork roast seasoning:

    • Mix with a spoon or a whisker until well combined, ensuring there are no clumps or pockets of individual spices.
    • Store: Transfer to an airtight container and store in a dark cool place away from direct sunlight.

    How to use it?

    • Pat the pork roast dry with paper towels.
    • Sprinkle the seasoning mixture over the meat and rub it into it, ensuring it is evenly coated on all sides. Let sit for a few minutes to allow the flavors to penetrate.
    • Cook the pork roast according to your recipe.

    Notes

    1. Paprika: You can use 1 teaspoon of sweet and 1 teaspoon of smoked paprika powder if you like. Use the best quality you can afford; cheap paprika is entirely tasteless.
    2. Add about ½ teaspoon of red pepper, red chili flakes, or cayenne pepper to taste for a spicy version.
    3. There is enough seasoning for 2 pork roasts.
