Why are these toasts so great?
- Nutrient-packed: Kickstart your day with cottage cheese to meet your daily protein requirements. Plus, the fresh, light toppings add their own nutrients, making these toasts a super healthy meal choice.
- Versatile: Perfect for different meal occasions, whether a quick breakfast, a satisfying snack, or a light dinner. Add your favorite toppings (sweet or savory) for a new taste experience every time.
- Quick and uncomplicated: Toast your bread, gather a few ingredients, and you're all set for a delightful cottage cheese breakfast toast.
Recipe ingredients
- Cottage cheese: There are many brands of cottage cheese; use your favorite. You can use either small curd or large curd, full-fat, low-fat, and even fat-free cottage cheese. However, the full-fat variety tastes best.
- Whipped and creamy cheese adds a delightful creaminess, which I prefer. You can prepare a larger batch using a whole 1 lb (450 g) container, which keeps well in the fridge for up to 7 days.
- If you donโt want to whip it, you can prepare this recipe with plain cottage cheese in its original form.
- You will need 1 ยฝ to 2 tablespoons of spread (smooth or curdy) for each slice of bread.
- Bread: The best bread for this recipe is sturdy and can hold up well with the topping. Sourdough bread is an excellent choice due to its texture and ability to toast nicely without getting soggy easily. It also adds a delightful crunch to your dish.
- Other types of bread: You can use other sturdy bread like whole grain bread, multigrain, or even rye. Choose the one you enjoy most.
- I donโt recommend using packaged, soft, white bread.
Topping ingredients
- Fine sea salt and ground black pepper to season the spread.
- Dill for salmon, egg, and cucumber toast. Use fresh dill if you have it. Otherwise, frozen will work, too. I donโt like dry dill, so I never use it for anything.
- Red onion (very finely chopped). Alternatively, use a shallot or green onions.
- Avocado toast with red onions and sesame seeds. Optional: a little cress or other microgreens to add on top.
- Smoked salmon toast with horseradish, red onions, and dill. You could drizzle the salmon with a few drops of lemon juice.
- Cucumber toast with red onions, fresh dill, and some paprika.
- Egg toast with red onions and dill. You can use fried or poached eggs; both versions are incredibly delicious.
- Tomato toast with pesto, balsamic vinegar, and red onions. Optional: Top with fresh basil leaves and a drizzle of olive oil.
- Banana toast with honey and cinnamon.

Expert Tips
- Choose the right bread: As mentioned earlier, opt for sturdy bread like sourdough or whole-grain that can handle the weight of the spread and toppings without becoming soggy.
- Toast it properly: Toast the bread to your preferred level of crispiness. A light to medium toasting works well for these toasts, providing a stable base for the toppings.
- Season well: The cheese has a mild flavor, so donโt forget to add salt and pepper to taste. Dill, horseradish, and paprika add flavor but consider using other spices.
- A grated garlic clove works miracles, and you can add it to all the toasts, excluding the banana toast, of course.
- Eat promptly: Enjoy your toasts relatively soon after preparation.
