Things to do with hard-boiled eggs
There hasn’t been an Easter yet when I wasn’t left with lots and lots of leftover hard-boiled eggs.
I have two children and three Godchildren. My kids also have quite a few friends who keep coming to our house to play regularly. So, every Easter we dye lots of eggs and every Christmas we bake lots of cookies together.
So Easter comes and goes, but the tons of hard-boiled eggs stay. Nevertheless, I am proud to say that I don’t ever remember throwing away one leftover egg.
We do eat a lot of them as they are, sliced on bread with mustard, pesto, or hot sauce. Maybe some cheese on top, some tomatoes or cucumber slices on the side. A perfect breakfast or dinner.
But to use more than one or two in one go, you must have some recipes up your sleeve. Not only egg salads, which are the first to come to mind but more than that.
To make cooking with leftover Easter eggs interesting, I’ve compiled a list of delicious recipes I found around the web.

I am so impressed that you never threw away a single Easter hard boiled egg! I love to eat them straight up with salt and lots and lots of black pepper, but one can only eat so much. This is such a fantastic roundup of egg dishes! They all look delicious! The cookies are so interesting.
