What to do with hard leftover boiled eggs from Easter?
There hasn’t been an Easter yet when I wasn’t left with lots and lots of leftover hard boiled eggs.
I have two children and three God children. My kids also have quite a few friends that keep coming to our house to play on a regular basis. So, every Easter we dye lots of hard boiled eggs and every Christmas we bake lots of cookies together.
Not to mention the Easter bunny, who seems to be crazy about my children, he always leaves so many eggs in our garden…
So Easter comes and go, but the tons of hard boiled eggs stay. Nevertheless I am proud to say that I don’t ever remember throwing away one leftover hard boiled egg.
We do eat a lot of them as they are, sliced on bread with mustard, pesto or hot sauce. Maybe some cheese on top, some tomatoes or cucumber slices on the side. A perfect breakfast or dinner, if you ask me.
But to really be able to use more than one or two leftover hard boiled eggs in one go, you have to have some recipes up your sleeve.
