A round-up of delicious recipes with leftover hard-boiled eggs from Easter. From egg salad and eggs in different sauces to hard-boiled egg cookies!!!
What to do with hard leftover boiled eggs from Easter?
There hasn’t been an Easter yet when I wasn’t left with lots and lots of leftover hard-boiled eggs.
I have two children and three Godchildren. My kids also have quite a few friends that keep coming to our house to play on a regular basis. So, every Easter we dye lots of eggs and every Christmas we bake lots of cookies together.
Not to mention the Easter bunny, who seems to be crazy about my children, he always leaves so many eggs in our garden…
So Easter comes and goes, but the tons of hard-boiled eggs stay. Nevertheless, I am proud to say that I don’t ever remember throwing away one leftover egg.
We do eat a lot of them as they are, sliced on bread with mustard, pesto or hot sauce. Maybe some cheese on top, some tomatoes or cucumber slices on the side. A perfect breakfast or dinner, if you ask me.
But to really be able to use more than one or two in one go, you have to have some recipes up your sleeve.
Not only egg salads, which are the first to come to mind but more than that.
In an attempt to make cooking with leftover Easter eggs interesting, I’ve put together a list of delicious recipes, which I found around the web.
